The round, strong, puffy puri shell is first broken on top and partially filled with mashed potatoes or chickpeas being the main stuffing. For taste, a small amount of haldi powder or chilli powder, or both, and a pinch of salt can be added. Sweet tamarind chutney and spicy green chutney, on top of the stuffing, are then poured into the container. Finally, sweetened beaten yoghurt is generously poured over the shell, and sprinklings of crushed sev, moong dal, pomegranate and finely chopped coriander leaves are garnished with the finished product.
